A lot depends on the type of system but a re-map will usually only release so much power where as another chip should give more when complimented with other modifications to fuel system and boost control

I'm not sure what's the best one for the modern VW turbo engines m8 I'm old school VDub and most of my Turbo experience is with RWD cars like Ford with Cosworth engines.
Just remember that with FWD vehicles, to much power will make it a pig to drive so I'd pick one that isn't to wild or cause turbo lag etc.
You'd be better off with a chip that gives a mild tune right across the rev range and generally improves the cars performance and drive rather than one that will give a boat load of power at certain revs.

As far as I see it you have the 2 options. The superchip is a pre programmed chip that is designed to alter timing, boost fuel and air etc. The other is a re-map which involves making the alterations to your vehicalon a rolling road. This must be the better option as every engine is slightly different and you are tweaking your engine and comparing the results as you do it. This may be a bit simplistic but seems to be true.
If you are looking for a place to do it there used to be a rally prep place on the opposite side of the road to Maiden law hospital in Durham (Just allong from Lanchester). When I had my 205 gti he was the b*llocks

Hope this helps
